ABJ Croissant Sandwich w/ Egg & Bacon

Hey everyone! Last night I had a sudden craving for bacon and something sweet. We picked up a few ingredients on our way home to satiate my tummy, and when I told L what I wanted to make, he grimaced at the thought. I can’t blame him – not many people like the thought of a breakfast sandwich with almond butter and jelly. I made it for breakfast and he scarfed it down before I even had a chance to dig in!
To make this tasty concoction you need:
1 tbsp butter
2 croissants
2 eggs, cooked over medium or sunny side up
2 slices of bacon, cooked
almond butter (or any nut butter you prefer)
fruit jelly or preserves (we used strawberry)
1. Melt the butter in a pan on med-high heat. Slice the croissants in half and place in the pan, cut side down to toast.
2. Slather the slices with nut butter and jelly.
3. Layer 2 pieces of bacon and one egg on top of one of the bottom slices of croissant. Place top half above the egg. Repeat for remaining sandwich.
4. You may now enjoy the deliciousness that you’ve created!
